It is a rich source of <b>protein</b> and <b>calcium</b>.</p><p>It is used in <b>baba ghanoush</b> (roasted eggplant dip), <b>pekmez</b> (sweet turkish dip), <a href='uzumaki_hummus_bites.html'>hummus</a> and in many other recipes. Because of its high oil content, it needs to be refrigerated to prevent spoilage. It has the highest oil content of any seed, with a nutty flavor.
